The other day someone posted on Facebook it was grill cheese sandwich day. I came home and made the grill cheese sandwich my menu selection. The problem was I enjoy my grill cheese with a soup; preferably a tomatoe based soup. I looked in the cabinet and I didn’t have it. I did have tomatoe sauce so I said let’s see. What I ended up was a delicious soup that I called Dump soup.
I choose the name Dump soup because I used leftover veggies and dumped it in the pot. It’s simple to make and delicious. I was able to get 2 servings out of the soup. I doubled the ingredients for 4 servings. Cook time is about 30 mins.
- 2 small cans of tomatoe sauce
- 2 cans of petite diced tomatoes with green chilies or plain petite diced tomatoes
- 1 can whole corn (or frozen corn)
- Frozen spinach
- Tablespoon of sugar
- Garlic powder
- Onion powder
- Black pepper
- Vegetable broth (optional)
Cook frozen spinach and set aside. Add tomatoe sauce, diced tomatoes, corn, and cooked spinach in a pot over low heat. Season to your liking with the listed seasonings. Add vegetable broth to make soup thinner (optional). Continue to cook on low until the diced tomatoes and tomatoe sauce becomes a liquid texture. Stir occasionally. About 20 minutes.
